Do I need to connect my wallet?

Only to open your own Crate. Your Crate belongs to the wallet holding your $NPC, so connecting is how it gets found. Everything else on this page is public.

Is the simulator my real Crate?

No. It only shows how Crates fill. It doesn't read any wallet and it doesn't calculate an allocation.
